Parmesan wafers
10 oz (300 g) freshly grated parmesan cheese
reheat oven to 350°F (180°C/Gas 4).
Working in batches, place tablespoonfuls of cheese onto parchment-lined (baking paper-lined) baking sheets, allowing space for spreading. Flatten each cheese mound into a 2-inch (5cm) round, or until it is almost paper thin. Bake until golden, 8-10 minutes. Remove baking sheets from oven. Using a metal spatula, remove wafers from sheets and place on a parchment-lined (baking paper-lined) rolling pin or similar curved shape. Allow to cool.
Serve warm or at room temperature.
