INGREDIENTS

2 garlic cloves, grated

olive oil 55 grams

maple syrup, 85 grams

harissa paste 20 grams

cumin seeds 5 grams

Kosher salt, freshly ground pepper

ground pepper

small carrots, scrubbed, tops trimmed to about 2" 1kilo/2.2 lbs

1 lemon, thinly sliced

 

METHOD

 

  • Preheat oven to 450°. 

  • Whisk all ingredients minus the carrots and lemons(do not add preserved lemons if using) in a bowl.

  • Toss carrots and lemon (not the preserved lemons if using) with ingredient  mixture in a large roasting pan to coat; season with salt and pepper. 

  • Roast, tossing occasionally, until carrots are tender about 25-35 minutes.



  •  

Notes: 

1-One can substitute some preserved lemons for the sliced lemon. 

2-it can be prepared 4-8hours before servings, just reheat before servings.
