Scallion brushes and scallion curls
1 Using a sharp knife, remove the root section from each scallion (shallot/spring onion). Cut the paler green section of each scallion into 2-inch (5-cm) sections. Discard the darker green section, or save for another use.
2 To make scallion brushes: Make 14 inch (6 mm) cuts in each scallion piece, forming a fringe.
3 To make scallion curls: Slice scallion pieces lengthwise into fine strips.
4 Place scallion brushes or strips in a bowl of ice water. Refrigerate until scallions curl, about 15 minutes. Drain and use to garnish or flavor your favorite recipes.
